Sustainable Sourcing

I am zealous when it comes to fresh, organic production methods across the entire spectrum of produce, ingredients and other healthful food products. The unique blend of Northern California farming, fishing, ranching & winemaking makes Napa / Sonoma a fantastic region to allow me to be a creative chef in all aspects of my culinary offerings.

The famous midwinter local favorite – fresh Dungeness crab - direct from sea to tables throughout the region is one of my passions as well. The area’s close proximity to the Pacific Ocean also brings succulent oysters, clams, a variety of fish, gorgeous produce, herbs and other edibles grown throughout the region, allowing me to create unique and incredibly delicious meals.

I enthusiastically support local organic growers, makers and manufacturers and recognize the vital importance of sustainability. Thus, worldwide sustainable sourcing allows me to create a wide variety of fabulous dining experiences.
